Pudding Queen Brownies by Wendi Peters

Coronation Street star and Masterchef finalist Wendi Peters tells us her very own Brownie recipe perfect for desert…

Ingredients

300g Dark Muscavado sugar
3 eggs
200g butter
200g dark chocolate ( at least 54% cocoa solids)
2 tsps vanilla extract
125g plain flour

Method

1. Preheat oven to 170 o c / 160 o c fan.
2. Grease and line a square 23 cm baking tin with baking parchment.
3. Put eggs and sugar and vanilla extract into a mixer and beat for a good 5 mins until really light and pale and creamy.
4. Meanwhile, put butter and chocolate into a bowl and melt in microwave for 2 mins … then mix well and cool slightly.
5. Add to sugar and eggs mix, folding in lightly until mixed thoroughly.
6. Do the same with the flour.
7. Pour into baking tin.
8. Bake in oven for 25 minutes until the top is cooked and cracking slightly but the inside is still gooey.
9. Remove and cool completely in the tin … needs a good few hours.
10. Remove and cut into squares … usually 16 but if making as a present of choc size .. cut into 36.
11. Dust with icing sugar and serve.
