The Big Mac n Cheese Burger

Serves 4

For the burger

540g Mince beef (A mixture of minced chuck steak and skirt steak works best)
50g Bone Marrow
Salt and pepper
A squirt of mustard

For the Mac and Cheese

200g of macaroni
45g butter
45g plain flour
480ml of milk (semi skinned or full fat)
160g cheddar cheese, grated
80g parmesan cheese, grated
A pinch of Paprika

For Serving

1 beef tomato, cut into 4 slices
4 lettuce leaves
4 Brioche burger buns, cut in half and toasted for texture
Mayonnaise
Good Quality BBQ Sauce

Method

  1. Boil a pan of water, add the macaroni and cook by the packets instructions.
  2. Melt the butter in a saucepan, add the flour until it all comes together to make a roux.
  3. Add the milk a small bit at a time, whisking thoroughly in between ensuring the mixture is smooth before adding the next.
  4. Once all the milk is combined, add the cheese a small amount at a time, again whisking thoroughly until smooth.
  5. Add the paprika and macaroni to the sauce, then pop it all in an oven proof dish and into the oven for around 30 minutes. If you’re making chips to accompany the burgers, now would be the time to pop them in the oven too!
  6. Next add all the burger ingredients into a bowl and mix thoroughly.
  7. Divide into four and mould into patties.
  8. Whack up the heat on a griddle pan or frying pan, wait until scorching hot and flash fry each burger on each side so they are crispy.
  9. Turn the heat down to a medium heat and cook for about 7-8 minutes on each side until cooked. By this time, your macaroni should be cooked too.
  10. Now it’s time for the building, you can do this how you like really but here is what we suggest…
  • Bun Base
  • Layer of mayonnaise
  • Crisp Lettuce leaf
  • Thin slice of your beef tomato
  • Burger patty
  • A big spoonful of your macaroni cheese
  • A generous drizzle of BBQ sauce
  • Finally, your toasted bun lid
  • VOILA!

Serving Suggestions:

Chucky cut home-made fries (Simply cut potatoes into chips, par boil until fluffy, and pop in the oven until crispy- around 35 minutes depending on size) and a fresh and crispy salad
