The Avocado Burger
4 x ripe Avocados
¼ Red cabbage, finely shredded
1x jar of roasted peppers
4 x slices of vegan cheese
Sprinkling of sesame seeds
For the Burger Patties
Pinch of salt & pepper
2 x cloves of garlic
750 grams of peas
2 x tins of chickpeas, drained
1 x bunch of spring onions
3 tbsp. pesto
300g breadcrumbs
150g sunflower seeds
Oil for frying the patties
Method
1. Put your shredded cabbage into a bowl and cover with two table spoons of white wine vinegar and a pinch of salt.
2. Add all of the patty ingredients, except the breadcrumbs into a food processor. Blitz until mixed thoroughly and a rough texture is achieved.
3. Remove into a bowl, season and add the breadcrumbs until thoroughly mixed and mixture sticking together. Shape into four patties.
4. Heat the oil in a large frying pan, when hot add the patties (don’t squash them in, so you made need two frying pans) and fry for 5 minutes on each side.
5. Once they are on, half your avocados length ways, peel and remove the stone. Cut the bump slightly on one half of the avocado so that it can stand still as the bottom burger ‘bun’.
6. Now start layering your burger! Bottom avocado half, a couple of tasty red peppers (try to drain most of the oil off), hot pea and bean patty, slice of vegan cheese, shredded cabbage, top bun and sprinkle with sesame seeds! If you want a kick, add in a squirt of Sirracaha hot sauce!
