Super Quick Sichuan Prawns

Sechuan Prawns

Ingredients – Serves 5

3tbsp of ground nut oil
A thumb sized piece of ginger
3 cloves of grated garlic
2 spring onion
A packet of fresh egg noodles
550g of raw prawns

For the sauce

1 heaped tbsp of tomato puree
2 heaped tsp chilli bean sauce
2tsp rice wine vinegar
2tbsp caster sugar
2tsp sesame oil
2tsp soy sauce
Handful of fresh coriander for serving

1 chilli, sliced for serving (seeds removed)

Method

1. Heat a wok over a high heat ( a large frying pan will do the job if you do not have a wok)

2. Add the nut oil, and after a minute or so (when very slightly smoking) add your ginger, garlic and spring onions

3. Stir fry for 30 seconds, stirring often

4. Next add your prawns, a pinch of salt and pepper then cook for about a minute, stirring continuously

5. Now add all of your sauce ingredients plus your noodles and cook for a further 3 mins.

6. Immediately serve with your scattering of coriander and chilli
