Gin and Tonic Slushie

Tree of Hope’s very own Fundraising Manager, Kate is quite partial to a G&T.. or two! So, below she tells us how to make her infamous Gin & Tonic Slushie that she’ll be serving at her Cocktail and Canapes Dine and Donate in the Spring. Take out the gin, and you’ve got a perfectly sophisticated alcohol-free cocktail too! Now lets be-Gin…

Ingredients

12 lemons (plus an extra 4 for garnish)
400g Caster Sugar
4 pints of water
70cl Gin
3 litres of tonic
Freshly picked bay leaves if you have them

Makes 28 cocktails

Method

1. Zest 12 of the lemons and place the zest in a pan with the sugar and water

2. Heat gently until the sugar has melted and then boil for 5 minutes

3. Meanwhile squeeze the juice from the zested lemons

4. Take the lemon syrup off the heat and stir in the lemon juice

5. Strain into a freezer proof container

6. Pop in the freezer and every hour fork though the mixture to create ice crystals until it’s sets

7. Take the mixture out of the freezer 10 mins ahead of serving and give a final fork through

8. Pour a shot of gin into a highball, add a scoop of the lemon ice, and pour over 100ml of tonic 8. Garnish witha slice of lemon and bay leaf
